Ingredients of Chicken Biryani Recipe:
- Chicken (600 gm).
- Basmati rice (500 gm).
- Fried Onion – Beresta (2 Pcs. medium sizes).
- Onion paste (2 Pcs. medium sizes).
- Cumin powder (1tsp).
- Ginger garlic paste (4 tsp).
- Coriander powder (1 tsp).
- Turmeric powder (½ tsp).
- Shah jeera (½ tsp)
- Red chilli powder (2 tsp).
- Bay leaves (5-6 ).
- Garam massala powder (3 tsp).
- Garam masala (including jaiphal and javitri).
- Plain Yogurt (250 gm).
- Salt (as per your taste).
- Saffron (2 pinches).
- Refined oil (7 tbsp).
- Milk (3 tbsp).
- Rose water (1 tbsp).
- Ghee (3 tbsp).
- Keora water (1 tbsp).
- Sweet atar (½ tsp).
- Black peeper powder (1 tsp).
- Boiled egg.
- Potatoes (2 medium sizes).
Preparation of How to cook Chicken Biryani Recipe
Marinate the chicken with 250gm plain yogurt or tok doi, 1 tsp coriander powder, 2 tsp red chilli powder, 1 tsp cumin powder, ½ tsp turmeric powder, ½ tsp salt, 4 tsp ginger garlic paste and 5 tbsp oil. Mixed it properly and Keep it for min 5 to 6 hours in freeze.
2Take Basmati rice in a bowl. Soak the Basmati rice in water for minimum 1 hour before cooking.
3Take a pan. Heat water in a pan for making Biryani rice. When boiling add 2 tbsp oil, ¼ tsp shahi jeera and 3-4 bay leaves.
Add basmati rice in boiling water. When rice gets 50% to 60% boiled then add 1 tsp salt. Mixed it very well.
Now add 2 tsp garam masala powder in marinated chicken. Mixed it well. After that heat the biryani handi and add 2 tbsp oil and 1 tbsp ghee. We can cook this bengali style biryani on completely ghee. Add garam masala and Bay leaves. Also add onion paste and fry it well. Cook in medium flame.
Now add marinated chicken and potatoes in biryani cooking pot. Cook in medium flame for 5 min. Now strained the rice and add rice in biryani making handi. Now put off gas oven.
Now add 2 fried onion or beresta, ½ tsp garam masala powder, 1tbsp rose water, ½ tsp black peeper powder and 1 tbsp keora water. Also add saffron in 3 tbsp milk and add in biriyani handi. Add ¼ tsp sweet atar and 2 tbsp ghee.
Now seal the biryani handi cover with atta or maida dough. Now take a tawa and heat it well. Put the biryani pot on the top of tawa. Now cook it in high flame for 5 min. After 5 min cook this biriyani in low flame for 15 min to 20 min.
After 20 min, put off gas oven. After 5 min remove the all purpose flour or atta dough and open the lid.
Bengali Style Chicken Biryani Recipe is ready. Serve hot Bengali chicken biryani with boiled egg and green salads.
